A LITTLE BIT ABOUT OUR
EXECUTIVE CHEF JOSUE TORRES

Josue Torres was born and raised in San Juan, Puerto Rico on an island known for its pristine waters, sunshine and culinary creativity. He was heavily influenced by his family's cooking, especially his mother. She was well-known for running one of the first food trucks in Puerto Rico specializing in indigenous products and the use of the freshest local ingredients. His love for cooking began as a teenager when he helped his mom prepare her culinary specialties. He studied at the culinary arts school in Puerto Rico affiliated with Johnson and Wales University. After graduation, Josue immigrated to Florida and began his career at the Hilton at Walt Disney World. He continued his education in baking and pastry at Valencia Community College and created a love for the art of baking which he shares with everyone today. Before relocating to Ocala, Josue was Chef de Cuisine at the Reunion Resort in Orlando.

Chef Josue joined the Hilton Ocala in 2014 as Executive Chef. Since joining, he has repositioned and elevated the culinary offerings throughout the hotel receiving accolades for both catering events and a la carte fine dining menu offerings. The award-winning Arthur’s-An American Bistro- has been transformed by Chef Josue to a casual elegant atmosphere; serving locally inspired bistro cuisine. His house made fresh ground bistro burger is a one of a kind experience, elevating this simple preparation to a high culinary art form. Chef Josue and his team take this position in all that they do by creating a culinary experience for all. Whether dining for breakfast with signature fresh baked muffins and banana bread or a six course tasting menu at Chef Josue’s Chef Table or an event for 200 in the ballroom, be prepared for one-of-a-kind culinary experiences with endless possibilities…..
